(preheat oven 350°)
Whisk together in a bowl:
3⁄4 cup of all-purpose flour
3⁄4 cup of unsweetened cocoa powder
1⁄2 teaspoon of baking soda
1⁄4 teaspoon of salt
Beat together in a bowl, or stand-up mixer, till light and fluffy, about 3 minutes:
1 1⁄2 sticks of unsalted butter, softened
1 cup of sugar
Then beat into the butter mixture another minute or two:
2 eggs
1 teaspoon of vanilla
~ Add flour mixture to butter mixture, mixing till just combined.
Lastly, stir in:
1⁄2 cup of chocolate chips
1⁄2 cup of white chocolate chips
~ Use small ice cream scoop to scoop out uniform cookie balls, and line up cookies on cookie sheet.
Bake about 10 minutes.
~ Create an ice cream sandwich with a scoop of your favorite ice cream between 2 cookies!
~ You can make these ice cream sandwiches ahead, wrap them in plastic wrap, and store in freezer to enjoy at a later date.
